Junket 1911 Step-by-Step – Chr. Hansen’s Laboratory – Ice Creams, Pudding, Variegated, Neapolitan Recipes

What is Junket? It’s partly an animal product–rennet. The following Junket ingredient list is from an Australian article Junket Tablets versus Rennet by Rebecca McLeod. Reddit for booklet and comments.

JUNKET: Salt, Calcium Lactate, Corn Starch, Rennet, Tricalcium Phosphate, Calcium Stearate

Junket tablets were called Hansen’s Household Rennet Tablets in their debut in 1886, and they sold with a recipe to make junket, an English dessert known also by other names such as curds and whey, slip, or rennet custard. Their customers referred to the product as “Junket tablets” so in 1895 the company renamed them “Chr. Hansen’s Junket Tablets.”

The 1874 on the package refers to the founding of the company in Copenhagen when they made digestive enzymes, including pepsin, and were researching rennet with coloring.
