1 pound Kirby or other small cucumbers
1 small sweet yellow onion
1 cup apple cider vinegar
1 cup water
1/4 cup sugar
1 tablespoon kosher salt
1 1/2 teaspoons pickling spice, homemade or store-bought
After reading the recipe, improvising, I use just one cucumber to fill the small jar, convenient enough to make them anytime I need sandwich pickles.
Mix water, apple cider vinegar, brown sugar (slight variation from recipe, also no onion in my version), kosher salt, and pickle mix (Starwest Botanicals Organic Pickling Spice) in pot to simmer. Pour mixture in mason jar over thinly sliced cucumbers. Let sit on the counter one hour, then refrigerator for 24 hours. No sealing of jars.
