The combined effect of heat and moisture in cooking food swells and bursts starch grains and softens the fibers in meat and vegetables. It also hardens the albumin in fish, eggs, and meat.
Frog Legs.
Sprinkle with slat and pepper, roll in crumbs, then egg and again in crumbs and fry three to four minutes in deep fat.
Mayonnaise.
Take one egg yolk and beat in, with silver fork, Mazola, Wesson or olive oil a few drops at a time until it thickens. Continue to add oil gradually, thinning the mixture a little from time to time with vinegar or lemon juice, using a little salt and a little mustard. It is impossible to give the proportions of this dressing as almost an unlimited quantity can be made from one egg yolk, provided the ingredients and utensils are cold. Taste from time to time and make to suit your own taste.
