Kerr Jars Save Sugar.
Sugar is not necessary to the successful canning of fruit in Kerr Jars, as they seal absolutely air-tight. For this reason they do not require sugar as a preservative. Sugar can be added when the fruit is served, in the same quantity as you would for fresh fruit. In this way, much less sugar is required. When canning fruit without sugar we especially recommend the Cold Pack Method, although either method is successful with Kerr Jars.
Strawberry Syrup
Cook several quarts of strawberries until the juice is extracted, or use the surplus juice from canning strawberries. For every pint of the strained strawberry juice use 3/4 pound of sugar. Boil rapidly for 5 minutes and can.
